A few weeks ago my husband and I decided to try out a local restaurant that we had heard amazing things about. The restaurant lived up to the raves and I am convinced that I had THE best shrimp I’ve ever eaten. The shrimp were served dressed in cilantro and a light sauce and were simply divine. So of course after we left I started brainstorming how I could recreate those amazing shrimp.
Shrimp have gotten a bad rap over the past few decades for being high in cholesterol but fortunately research is now showing us that dietary cholesterol has little to no effect on lipid labs so shrimp and egg lovers rejoice!
I started by cleaning and deveining my shrimp then marinating them in coconut milk…
